Chicken & Spinach Orzo-Dinner In Under 30 Minutes

Need a quick weeknight dinner for four? Hot, homemade chicken, spinach and orzo is just 30 minutes away. Made with leftover chicken or store-bought rotisserie chicken, meal prepping for this recipe is a breeze.

    Chicken & Spinach Orzo–Dinner In Under 30 Minutes

  • 2 teaspooon olive oil

  • 1 large onion halved and sliced

  • 0.25 cup dry sherry or chicken broth

  • 3 tablespoon currants or raisins

  • 1.5 cup shredded, cooked chicken breast from rotisserie chicken

  • 8 cup packed spinach torn into pieces

  • 0.25 teaspoon salt

  • uncooked orzo or 8 ounces

  • 0.25 cup toasted pine nuts or slivered almonds

  • 0.25 cup shaved fresh Parmesan cheese

Directions

  • Heat oil in a large nonstick skillet over medium heat. Add onion; cook, stirring occasionally, 15 minutes or until onions are golden brown.

  • Stir in sherry, currants and chicken. Add spinach. Cover with lid and cook for 3 minutes, tossing occasionally with tongs until spinach wilts. Stir in salt.

  • Cook orzo in boiling water for 8 minutes or until tender; drain. Toss together drained orzo and spinach mixture. Sprinkle with nuts and cheese. Serve immediately.
