EASY BRAISED BRISKET

Enjoy crispy whole grain crepes for breakfast! They’re so versatile because you can add anything you want to the filling. These crepes come from the Lose Weight the Smart Low-Carb Way Cookbook and they use banana, kiwi, and plain yogurt, but whatever fruit you have on hand will work.



Ingredients for servings

    Brisket

  • 1 beef brisket trimmed, (2.5 pound)

  • 1.5 c ups chopped onion

  • 1 teaspoon dried oregano

  • 0.33 cup chopped pitted kalamata olives

  • 14.5 ounce diced tomatoes undrained, 1 can

Directions

  • Sprinkle brisket evenly with 0.75 teaspoon salt and 0.25 teaspoon freshly ground black pepper.

  • Heat a large Dutch oven over medium-high heat. Coat pan with cooking spray. Add brisket to pan; cook 10 minutes, browning on all sides. Remove brisket from pan.

  • Add onion and oregano to pan; sauté 3 minutes.

  • Return brisket to pan; add 0.5 cup water. Cover; reduce heat, and simmer 2 hours. Add olives and tomatoes; cover and cook 1 hour.

  • Remove brisket from pan. Let stand 5 minutes. Cut brisket against grain into thin slices; return brisket slices to pan. Cover and cook over medium-low heat 30 minutes.
