ROSEMARY & ORANGE WAFFLE

Kick up your waffle game a notch by making waffles courtesy of Lorimer Street Kitchen, which contains crushed rosemary and orange zest. Whole wheat flour waffle batter is full of fiber goodness, plus, this breakfast treat is suitable for vegans.



Ingredients for servings

    Rosemary & Orange Waffle

  • 2 cup whole wheat flour

  • 2 tbsp agave nectar

  • 2 tsp baking powder

  • 0.75 tsp salt

  • 2 tsp orange juice

  • 0.33 cup apple sauce

  • 0.33 cup water

  • 4 tbsp fresh rosemary, divided

  • 2 tbsp orange peel, divided

  • 2 tbsp ground flax meal

  • 2 cup soy milk or milk of your choice

Directions

  • Preheat waffle iron.

  • Whisk together flour, agave, baking powder, baking soda, and salt in a large bowl.

  • Whisk together milk and orange juice, in a small pot and add 2 tablespoons rosemary and 1 tablespoon orange zest. Warm on low heat for 10 minutes, and stain out rosemary and zest. Mix milk with apple sauce, flax and water in another bowl, and let sit for 5 minutes to let flax thicken. Mix in 2 tablespoons rosemary and 1 tablespoon orange zest, and then whisk into flour mixture until just combined.

  • Brush hot waffle iron lightly with coconut oil and pour a slightly rounded 0.5 cup of batter into each waffle mold. Cook waffles according to manufacturer’s instructions until golden and cooked through (about 3 minutes). Transfer as cooked to rack in oven to keep warm, keeping waffles in 1 layer to stay crisp. Make more waffles in the same way.
