Turkey-Stuffed Bell Peppers

    Turkey-Stuffed Bell Peppers

  • lean ground turkey

  • 1 cup brown rice cooked

  • 1 can Italian-seasoned diced tomatoes

  • 4 bell peppers seeds and tops removed

  • 0.5 cup cheddar cheese shredded

Directions

  • Preheat the oven to 375°F (190ºC). In a skillet, cook turkey over medium-high heat until browned. Add brown rice and tomatoes and heat until slightly thickened. Divide mixture evenly between bell peppers and place in a square baking dish. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese over the top and bake another 5 minutes or until cheese is melted.
