With a little more effort put into the preparation, the result was a flakey and delicious piece of salmon


  • Parchment paper or aluminum foil
  • 6 ounces skinless salmon fillet
  • Salt to taste
  • Pepper to taste
  • Olive oil
  • 1 lemon sliced
  • Fresh thyme


  • Preheat the oven to 400˚F/200˚C.
  • Fold the parchment paper in half, then open up.
  • Lay down the salmon. Drizzle oil and sprinkle salt and pepper. Lay lemon slices and thyme on top of the salmon.
  • Fold the parchment paper over the salmon, and cinch the paper together by folding it over itself along the edges.
  • Bake for 13-15 minutes or until internal temperature of salmon reaches 145˚F/63˚C.

    This is one of our family favorites. We make it often. We use rectangles of parchment paper, and simply roll/fold the edges and staple them closed. Each person makes his or her own little packet with creator’s name written on folded edge with a Sharpie. We usually add zucchini, shredded carrots, onion, wine, lemon, S&P–but we have tried many successful combinations. Sometimes we also throw in a few small shrimp. Easy, fast, healthy meal.
